Hypolipidaemic activity of the protein and polysaccharide fraction from phaseolus mungo (blackgram) in rats fed a high-fat-high-cholesterol diet

The globulin fraction from blackgram at the 5 % dose level kept the cholesterol, phospholipid and triglyceride levels of the serum, liver and aorta of rats fed a highfat- high-cholesterol level at much the same level as in rats fed a normal diet. The polysaccharide fraction at the 56% dose level showed a similar lipid-lowering effect. Thus, the protein fraction seemed to be more effective in decreasing the total cholesterol and triglyceride levels than the polysaccharide fraction.
Although the globulin fraction increased cholesterol absorption from the intestine, it also increased the breakdown of cholesterol to bile salts and caused increased faecal excretion of bile salts. The polysaccharide fraction increased excretion of both faecal sterols and bile salts.
The globulin fraction contains a carbohydrate residue and is heterogeneous on acrylamide gel electrophoresis. The polysaccharide fraction contains glucose, galactose, mannose, small amounts of hexosamines, and appreciable quantities of uronic acids, sulphate and acetyl groups. It also contains about 20% alkali-extractable protein and about 7.3% fibre.
